What's Cooking Wednesday - Surprise Salad
Please go to Shan's place for more What's Cooking Wednesday participants.
As I've mentioned in other posts, I love salads. I have a salad for lunch most days of the week. I put all kinds of things in my salads and that's how they don't get boring.
For today's recipe, I'm posting one of my favorite summertime salads. This really isn't "in season" yet, but I got some beautiful greens as part of my Tantre share from last week, and there were Georgia blueberries on sale at the market, and Georgia isn't as far away as some places... so I splurged.
So, for when the summer heat picks up, I give you my Summer Salad with Blueberries and Goat Cheese:
Jen's Summer Salad with Blueberries and Goat Cheese
Ingredients:
For the salad:
2 large handfuls of spring/summer greens, rinsed and dried
5 large radishes, sliced
1 1/2 cups blueberries
2 oz. of soft goat cheese, preferably peppered goat cheese
Freshly ground pepper, to taste
For the dressing:
2 TBS extra virgin olive oil
1 TBS thick fruit vinegar or a good balsamic vinegar (I used a blackberry-balsamic mix)
4 large, fresh, mint leaves, chopped fine, or 1 tsp dried
a pinch of Kosher salt
more pepper to taste
Instructions:
1. Whisk together the dressing ingredients and let sit, while you wash and prep the salad ingredients.
2. Toss together the greens, radishes and blueberries.
3. Grind pepper over the salad and toss with the vinaigrette.
4. Crumble the goat cheese over the top.
Enjoy with a nice glass of sweetish white wine, like a Riesling.

Oh my what a gorgeous salad. I like!
It's really refreshing. I love it!
What a great photo!
Oh, that looks so good. Yum!
Thanks, Mae. I'm learning the trick of taking umpteen photos for each shot that I want. It's helping. ;-)
Thanks, Renae! I'll be over to see your concoction soon.
what a great use of blueberries beyond the usual pie which makes my waistline just a wee too big
Great use of ingredients Jen. Nice touch with the blueberries.
YUM. YUM. YUM.
I'm so going to try this -- with a riesling or my favorite, a gewurztraminer.
OMG. That looks delicious!
Hola Jen :D. I like the title: Surprise salad! There's nothing better during summer heat than salads... yours is wonderful... and needs no time in front of the heat. Perfect :D
oh wow wow wow, that must be a fabulous salad to eat!
It makes my sandwich which I have to eat now for lunch so dull and uninteresting.
This sounds awesome! Blueberries can be hard to find here but I saw some in Delhaize the other day. Sounds great for when it stops raining and we can eat in the garden.
Beautiful!
I would definitely enjoy this sald with its hint of blueberry in the dressing even:D
Peter and Flower Child - that's why "Surprise Salad" - blueberries are really a natural with fresh greens, though, especially slightly bitter greens.
Jane - Gewurtztraminer is a great idea, too!
Thanks, Amy!
I agree, Nuria. Salads in the summer and soups in the winter - a perfect balance!
Well, make some salad next time, Goofball! I bring sandwiches often when I'm teaching, too, because they're easier to bring. Sigh.
Lilac, I think raspberries or other berries would work well here, too.
Thanks, Teri!
Ooooo, Val, what a good idea - you could muddle some berries into the dressing.
Fruit and cheese in salad with a basic vinaigrette is definitely one of my faves; I used to always get a grilled chicken with melon (cantaloupe, watermelon, honeydew) with a raspberry vinaigrette for lunch *all the time* in Philly. Sooooooo good :)
Man I miss blueberries :(
The grilled chicken and cantaloupe sounds wonderful! My DH is allergic to all melon. It's a shame.
I'd miss blueberries, too. Probably more than any other American food.
oh my! I want one now! Yum!
Wow! That looks so crisp and delicious! :) My mouth is watering just looking at that pic.
Anno, you might have all those ingredients soon, right?
Sandy, it really is light and delicious!
That sounds fantabulous, Jen! I love salads too, and I agree you can change them up so much that they never get boring!
It's one of my favorite combinations, Jenn. Really fresh-tasting.
This is the exact type of recipe I'm always looking for because I love eating salads but get bored with the same ones so quickly. Off to forward this to a friend of mine !
Enjoy, Alex! BTW... I often forgo the vinaigrette entirely and still love it!
oh, yum.
Jen, What a refreshing salad to eat on a hot and humid day! light and packed with flavor!
That's what I love about it, Proud!
PM - thanks!
